Advice for covid

Karmen KMSS approved Recipe

 Hi nak tweet recipe

Here goes choice of protein ialah ayam kampung, ikan laut, udang, tulang/carcass Let me know your choice of protein.

1. Ikan kukus 3 bahan Ikan segar baru mati sejam lalu Hiris halia muda Soak jujube, cut half Soy sauce Salt perut ikan, rub ikan dgn minyak masak, letak halia jujube di perut, drizzle soy sauce & kukus Suka halia? Shredded more, last 3mins tabur lagi atas ikan w cili padi


2. Udang 3 bahan Udang deveined, slice dlm sikit nak sumbat bawang putih goreng, set aside Halia shredded Garlic tumis byk minyak, dont brown, cukup naik wangi, put salt Susun udang di pinggan dlm, tuang garlic dlm udang, tabur halia atas, kukus. Done Suka pedas in cili padi

3. Kaki ayam + winter melon Dont potong kaki ayam half. Y? Nanti more scums. Cukup buang kuku. Blanch air didih Pilih winter melon by smell. Jgn buang kulit. Kikis white part A pot of water, halia muda, wangi? In kaki ayam cook 45mins. In winter melon. Jujube & salt in. Done

4. Tak perlu beli ayam kampung seekor pun untuk dapat soup or buat broth. Kalau di kedai berdekatan ada fresh ayam, get the carcass. Murah dan yang penting segar. We need to cook the bones long, extract the nutrition dari tulang ayam. Halia, carrot, radish, beetroot

5. Sup rangka ayam + beetroot Macam biasa blanch first. High heat, didih. Throw, wash, set aside Halia in water, wangi, bawang holland jangan potong, didih, rangka ayam, carrot, beetroot, salt. Done. Masak 45mins above slow fire til didih.
Sup ada letak bawang besar kalau tak cukup masa didih, akan cepat basi. Or kalau nak letak in fridge leftover soup, scoop all the bawang besar. Its the same with leek.

6. Mee Sua Udang or Bilis Ada rice wine? Add at the end Saute kepala udang til wangi, in red onion, layu, half cup water in, didih, gradually add more. Salt pepper, drop 🥚 , 🍤 , in mee sua done. Bilis - squeeze dry soaked bilis, tumis w minyak, in garlic, ikut step atas

Stok Bilis ni sama dengan #6 Beza dia perlu banyak bilis. The more the merrier. Bilis kita kecil, cant compare bilis lembar korea, salted more flavour Kalau dapat borong bilis belum kopek lagi bagus. Penting bilis segar Wash, tos kering, tumis naik bau, garlic, reneh, didih

#8 Sotong stir fry celery 🐙 besar, slice open, criss cross dlm Rebus or stir fry kosong celery dahulu Saute garlic, cili kering/padi, in sotong, drizzle soy sauce, api besar 1min Celery in, salt, pepper, some air, tutup lid. Done

Selama makan sotong katak 2.5-3kg above tak pernah liat One way is to score the squid first Sotong, slice open, knife menyiring, criss cross. Mesti inside, if not sotong wont curl This also skip cooking time. Some people blanch their sotong, imo no need.

#9 Ikan kurang segar tapi nk kukus juga: 1. Kukus ikan yg cuma dramas salt n halia. If it takes 15mins to cook the fish, stop halfway. Buang air ikan 2. Ready soy sauce, garlic oil/ sesame oil, leek/daun bawang, shred halia, cili padi, browned garlic, pour over 🐟, kukus. Done.

#10 Sa Pak (Clam/Pipis) Soup Titik serai and halia in a pot of water. Kalau ada leftover chicken stock the best. Didih, add white pepper and salt. Throw in clams. Add sliced leek. Done Ada white wine? Add. Mantul. Welcome Seafood's sedap sbb guna byk chicken stock & msg. 🤣

#11 Ganti mee kuning to mung bean vermicelli Healthier, gluten free Rebus mung bean/su'un until lembut. Tos. Set aside Tumis garlic & onions, 🥕, kailan stem cut 1/2, some water, in mung bean 🍜, soy sauce, pepper. Done Omelet cincang halus tabur atas.

The above recipe, some would gaul soy sauce with few teaspoon of sugar. It will caramelized the taste and blend well w the sauté carrot and kailan. Tak letak ok je. Pilih soy sauce yg bagus. When wok is sizzling, drizzle them at the side, 🔥😋

#12 Ayam Kampung Kukus the easiest Ayam kampung asli, butterfly cut ramas garam & halia muda. Goji soak, and tabur w halia di bawah & atas ayam Letak di pinggan yg agak dalam. Kukus 45mins. Akan ada chicken fats & stock di pinggan, pour into a bowl🤤 Cut the chicken. Done

Untuk kesekian kali, Halia muda atau halia tua? Halia muda anytime Halia tua in cold weather Buy local halia. Not imported ones. If you are in pasar TTDI, go ask the aunties for Halia Bentong. Borong? Keep them in dry cool place

#13 Sup Ayam Banyak Bahan Pick one : 🌽, 🥜, winter melon or lotus root Boil jujube w halia til wangi, in above choice w soaked dried 🍄 & dried 🐙, wangi n didih, tutup 🔥 🐔 in, close lid, after 3-5mins, slow fire 15-20mins, cucuk drumstick, tembus? Take out let it cool

Ayam suhu suam suam, ramas dgn garam. Bila cool totally, barulah potong. Js so skin doesnt break Soup tadi add white pepper and adjust salt as dried squid inside will give peak umami taste If nak meriah lagi, didih carrot & bawang holland in soup Its a 1 pot make 2 dishes dish

Lobak Putih perlu ikut keadaan dan ikut whoever you are cooking for. Lobak putih is cooling and detoxifying js like winter melon - good for heatiness Winter melom trick is always smell first b4 beli Tak wangi jgn beli. Scrub the white part, cook w skin, soup wangi😋

#14 Sengkuang tumis ayam Boring makan soup, nak makan satiating lauk Marinate dada ayam hiris w soy sauce, pepper & oil Tumis garlic, in ayam td, sedikit air too cook ayam thoroughly. In shredded 🥕 for color & sengkuang. Salt if needed. Done Berkuah? perlu starch water

Nak pilih ikan utk kukus, go for ikan merah, ikan putih, bawal putih or kerapu sunuh/coral fish Avoid brown kerapu. Tenggiri because senang nak masak, so its always top 3 choice. Ikan kecil is good, segar dan easy to cook. Nanti saya ajar masak ampap
